1 (3-4 Lb) beef tenderloin

½ cup chopped onion

1 ½ T butter or margarine melted

1 C Dry sherry

3 T soy sauce

2 t dry mustard

1/8 t salt

1/8 t pepper

Trim excess fat from beef tenderloin. Place beef tenderloin in large shallow baking pan: bake uncovered at 400º for ten minutes.


Sauté’ onion in butter until tender; add remaining ingredients. Bring to a boil- pour over tenderloin. Reduce heat to 325º-bake 35 minutes or until a meat thermometer reaches 140º to 170º. Baste often with drippings. Slice tenderloin; serve with remaining drippings.

Yield; 10-12 servings
