1 lb Italian Sausage (cut into 1 inch pieces)

1 Lb Shrimp

4 Cups diced cooked chicken

1 Large Yellow Onion

3 Lg Carrots

3 Stalks Celery

4 Cups chicken broth

28oz. crushed tomatoes

cup rice

cup cooking sherry

1 bay leaf

1 Tbs Salt

1 Tsp Black Pepper

1 Tsp Red Pepper

1 Tbs honey

2 TBS Olive Oil

3 cloves chopped garlic



In large soup pot brown sausage, olive oil, and garlic.   Once sausage is cooked, approx 5 minutes, added onions, carrots and celery all diced roughly.  Allow vegetables to sweat some of their juices, approx 5 minutes.  Then add tomatoes, chicken broth, sherry, honey and spices and bring to a boil.  Reduce to a simmer and add shrimp, chicken, and uncooked rice.  Ready to serve in 30 minutes, yet tastes even better after a few hours.
