Turkey or Chicken with Mango Salsa

Salsa  - Prepare Salsa when cooking Turkey/ Chicken Breast

2 Cups dried ripe mango (2 mangos)

1 chopped cucumber

1 cup chopped Red Bell Pepper

1 Red Onion

1 Tablespoon Seasoned rice vinegar

1 Teaspoon hot sauce

1/2 Teaspoon Salt

2 Serrano Chilies seasoned and minced



1/4 cilantro

1/2 cup lime juice (2 limes)

1/4 minced onion

3 Tablespoons Chimayo- or New Mexican chili Powder

2 Tablespoons Ancho chili powder

2 Tablespoons dry white wine

2 Tablespoons virgin olive oil

2 Tablespoons Chipotle Chilies in Adobo Sauce

1/2 Teaspoon salt

1/2 Teaspoon cumin

3 Cloves of garlic


Combine and Marinate Turkey breast or chicken- Marinate over night



Cook turkey or chicken breast

Place Marinate in Saucepan and bring to boil- lower to simmer for about 2 minutes


Plate Turkey or chicken Breast- pour heated marinate mixture over breast and then top with Salsa
